This year we decided to grow our own garden. My husband installed 3 huge garden beds and I took my first stab at growing something with my black thumb. To my surprise, we have a 7 foot tomato plant, peppers, snap peas, raspberries, lettuce, blueberries, corn, cabbage and 2 huge pumpkins. I would call that success! The one thing in our garden that grew like a weed was kale. I got to the point where I didn’t know what to do with it and how to consume it fast enough. I took to the kitchen and experimented. Here are my 4 favorite kale recipes.
Kale and White Bean Soup by epicurious.com: I ended up make a huge pot of this soup and freezing portions of it to save for later. It is a healthy and flavorful soup that I could eat all the time! To make it even more healthy, swap the kielbasa or smoked sausage for chicken. Yum!
Kale, Quinoa, and Avocado Salad with Dijon Mustard Dressing: I love this recipe because you can make a big batch and eat it over a few days. It is flavorful, healthy and filling. Not to mention, super easy to make!
Kale Chips: Join the latest rage and make your own kale chips. I have tried everything from garlic to cheesy and this is my most favorite recipe. A personal tip, make sure the kale is dry before adding other ingredients.
Kale, Pinenut and Currant Salad: This recipe is one that we have made in our family for years. I haven’t been able to find one that tops it. To make it taste more like summer, swap out the vinegar with fresh squeezed lemon.
