I got the opportunity to spend an evening with my best friend. As we talked about our latest and greatest, we got to the topic of new recipes. He mentioned that his partner made the most delicious Cornish game hens for dinner that week. Which reminded me of a delicious recipe that I had on file. What I love about Cornish game hens is that they are small, simple and easy to work with. This recipe is great for the holidays because it has those warm and cozy spices like cinnamon and nutmeg. The drumsticks are so tiny, even the kids can have one of their own!
Preheat oven to 400°F.
Whisk first 6 ingredients in medium bowl.
Pour 2 cups sauce into a saucepan. Reserve 1 cup sauce.
Rinse hens inside and out. Pat hens dry with paper towels.
Sprinkle inside and out with salt and pepper.
Place 3/4 of chopped onion and 3 minced garlic cloves in cavity of each hen.
Arrange hens on large rimmed baking sheet.
Roast hens 10 minutes. Baste with reserved sauce. Continue to baste until hens are baked.
Continue roasting until hens are golden (roughly 45 minutes).
When hens are nice an golden, transfer them to cutting board; tent with foil to keep warm.
Scrape out onions and garlic from hen cavities and set aside.
Using large knife, cut hens in half lengthwise. Remove backbones.
- 1 1/4 cups orange juice
- 1 1/4 cups dry red wine
- 1/2 cup honey
- 2 1/2 tablespoons soy sauce
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 Cornish game hens, giblets removed
- 3 small onions, chopped
- 12 garlic cloves, minced
