With Halloween upon us, I think of food. Yummy, sugary treats are always delish, but for my little ones I am always on the lookout for healthy snacks that will fortify them and distract them from all the junk that they inevitably get in their treat bags.
It has become a sort of tradition that I make a three bean veggie chili for dinner on Halloween night before trick-or-treating. I found the recipe in Cooking Light years ago and it is full of vegetables, beans, and warm, comforting flavors. I love one-pot meals and this one does the trick. My kids love it with lots of cornbread on the side.
