3-Step Peanut Butter Cookies

After just moving, the thought of breaking out the baking supplies made me shudder.  We are still digging out of our boxes and I wasn’t sure I’d be organized enough.  But then I remembered the EASIEST cookie recipe ever.  I came across this one a few years ago in Parents magazine.  Three ingredients – peanut butter, sugar, and an egg.   No mixer necessary.  Love it!

Three ingredients is all you need!

This is one cookie you don’t need to run to the store for since all the ingredients are probably in your pantry.  I don’t even have a working pantry at this point and I was able to find everything.  Score!

If you want to get real fancy, add a chocolate Hershey Kiss after they come out of the oven.  We just had them all unwrapped and ready in a bowl and then pressed them on top once they came out.

One note to mention: as we had the cookies ready to go into the oven, it became clear that the cookie sheet I was using was too large for my oven.  Since we just moved, I haven’t made cookies here yet, and this presented a slight problem.  I had to move the cookies from one sheet to a smaller one and in the process the cookies warmed up a little, causing them to spread out considerably during the baking process.  So, they didn’t look quite as they should have at the end, but they still tasted yummy.
